Welcome to our little corner where we share the meals and recipes we whip up in our van! To be honest, our recipe collection isn’t vast—it’s pretty simple—but we’re always on the lookout to expand it. We love dishes that are easy to prepare, require minimal effort, and fit perfectly with life on the road. If you have any go-to, hassle-free recipes, we’d love to hear about them!

This is also where we’ll share the occasional dining-out experiences we have. While eating out isn’t something we do often (about once or twice a month), it’s always a treat, and we’re excited to bring you along for the ride. Recipe #1 Taco Bowls

This recipe couldn’t be simpler, and we keep it budget-friendly. Our taco bowls are essentially deconstructed tacos made with ground turkey instead of beef. Here’s how to make them: Start by browning some ground turkey in a pan along with finely chopped peppers, onions, and garlic. (Jill prefers the peppers and onions chopped small—big chunks aren’t her thing!) While the turkey mixture cooks, get your rice going. If you're cooking rice on the stove, remember the ratio: 1 cup of rice to 2 cups of water. Trust me, I’ve messed that up more than once and ended up with crunchy rice—not ideal! Once everything is cooked, divide the rice and turkey mixture into bowls (or a plate, if that’s your style). Top it off with shredded lettuce and some reduced-fat fiesta blend cheese. And voilà—you’ve got yourself a delicious, simple taco bowl. Enjoy!

Recipe #2 Ramen/ Asian Bowls

This dish takes inspiration from a HelloFresh meal Jill used to make back when we had a house. Let me tell you, those meals were absolutely fantastic! While this recipe is just as simple, it has a unique twist. Here’s how you can recreate it: Start by cooking two packets of ramen noodles according to the package instructions. While the noodles are cooking, heat up a pan and begin browning ground turkey or chicken. Add diced peppers and your favorite garlic chicken seasoning to the meat as it cooks. Once the meat is about 95% cooked, reduce the heat to medium-low and stir in a generous amount of hoisin sauce along with a dash of your preferred hot sauce (we highly recommend Kinder’s Buttery Buffalo sauce). When the noodles are done, drain them and mix in some of that delicious sauce. Combine the noodles and meat mixture thoroughly, ensuring everything is coated evenly. For the finishing touch, sprinkle some crispy fried onions on top, and BOOM you’ve got yourself a flavorful, Ramen-Asian-inspired dish! Enjoy!
